Healthier Banana Train Cake

Ingredients :

  • 2 cups Bob’s Red Mill paleo flour
  • 5 ripe bananas (medium – large)
  • 1/2 cup sugar
  • 1/2 cup butter 1 stick, softened
  • 2 eggs
  • 2 tablespoons almond milk
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips (I use enjoy life dark chocolate)

Instructions :

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a train cake pan OR loaf pan.  (Train Pans will bring much more excitement)
  2. In a large bowl, (Now is the time to pull out the Kitchen – Aid)  place all ingredients in the bowl EXCEPT the chocolate chips – Mix about 2 minutes or until batter like mixture- stir in chocolate chips.   Pour mixture into your pan and bake 40-45 minutes.    If not quite done place back in for 5 minute increments –

Incase anyone cares, the train pan came from my beloved Grandmother.   I used a beautiful teal kitchen-aid that was purchased in love. OH and I took lots of ridiculous photos of my super cute kid while I let him get all his germs everywhere while making this.
