Healthier Hotcakes with Triple Berry Syrup

Healthier Hot Cakes

Ingredients
-1 3/4 gluten free flour (we like Bob’s)

-1 1/2 TSP baking powder

-1 TSP baking soda

-1/2 TSP salt

-2 large eggs

-1 1/2 cup unsweetened vanilla almond milk

-1 TSP vanille extract

-1/2 TSP ground cinnamon

In a mixing bowl (or large bowl) mix all dry ingredients.  Add in remaining ingredients and mix well.   This mix will be thicker than usual.

Heat a skillet ( I use a cast iron skillet ) and grease well (use coconut oil for high heat.

Pour approx 1/4 cup out on heated skillet.  You will want to use a pan to spread the mixture out a bit.  Cook until golden brown on both sides – approx 2-2.5 minutes each.

Triple Berry Syrup

Ingredients
-2 cups frozen berry mixture (blueberry, blackberry, & raspberry)

-1/3 cup water

-1 TSP vanilla extract

-1/2 TSP ground cinnamon

-2 TBS maple syrup (optional to add more if desired)

Place all ingredients in a sauce pan on medium heat stir occasionally until you have the syrup like consistency you desire.
